Alpha-galactosidase
Alpha-galactosidase is an enzyme used to hydrolyze or break Alpha-1, 6-glycosidic bonds in galactosyl oligosaccharides (Alpha-galactosides), liberating simpler, more usable sugars and eliminating its anti-nutrient effect. It can be used as food additive or healthe supplement.

One unit (U) of galactosidase is defined as the quantity of enzyme, which liberates 1μmol P-nitrophenol in one min at 37ºC and pH5.0
Mechanisms
Alpha-galactoside (such as raffinose and stachyose) is an anti-nutrient factor present in some plant seeds. Its concentration is the highest in bean seeds and lowest in grain seed.
